Pumpkin not Just for Halloween
I remember sitting down with my New Zealand family 10 years ago to a dinner of lamb and pumpkin (not potatoes). This staple continued every night, though the family did vary the type of pumpkin that was used. I was shocked that such a traditionally decorative vegetable was actually part of any country’s diet.

The main healthful qualities of pumpkin are the large amounts of antioxidants and beta-carotene. Antioxidants enhance immune defense and therefore lower the risk of cancer, infection, and a host of chronic diseases. Beta-carotene converts to Vitamin A and also helps reduce the risk of cancer and other dangerous diseases.

So bake it, grill it, put it in a soup, just remember Halloween is not the only time of year to take advantage of such a healthy vegetable!
